What's in a grade?
The three most common USDA grades of beef are Prime, Choice and Select, with Prime being the best.

When it comes to USDA graded beef, more than half ends up as USDA Choice. Within the Choice category there are three additional levels of quality. The majority of Choice cuts only make the minimum requirements, rising just above Select, a less tender and less flavorful grade of beef.

That's quite a spread in quality – and the reason the CAB brand accepts only beef that grades USDA Prime and the top levels of USDA Choice. It's the only way to ensure consistent, outstanding quality.


Only 8% of all beef earns the Certified Angus Beef ® brand.

• "Angus" refers only to a breed of cattle. There are many brands of Angus beef. Look for the premium black, gold and red label that says ‘Certified Angus Beef ®' to ensure consistent quality and mouthwatering flavor.

• The Angus influence is the starting point for determining beef quality. The true test of an Angus brand is its quality requirements or specifications.

• Less than one in five Angus-influenced cattle will pass the precise standards required to earn the CAB brand name.

• The USDA certifies the CAB brand's specifications. Strict standards assure marbling, tenderness and consistency.

• Angus-influenced cattle are evaluated by USDA graders, ensuring completely unbiased approval.

• The CAB brand is the only brand that tracks every pound of beef from USDA approval until it is sold to consumers.

• The majority of USDA Choice beef misses the CAB brand's mark for exceptional juiciness and flavor.
